Onion and Potato Soup.
The time when it was so cold that I wanted to eat soup for lunch. good thing my grandmother had a mason jar, I borrowed it as my lunch box and enjoyed a warm and tasty soup for lunch.
Onion and Potato Soup recipe
Ingredients:
- a medium-sized white onion
- 2 cups beef, chicken or vegetable broth (i used potato broth)
- 2 tbsp butter, softened
- 1 tbsp flour
- salt and pepper
- cheese, grated
Procedure:
- heat up water, bring to boil. Add a cubed potato. I left the skin on and let it cook for 10 minutes. drain but keep the potato water for later.
- while the potato is cooking, slice the onions in half, then half again. you can also do rings, if you want. i really don't have any tips on not crying while slicing them up, i just try to look away from it while slicing. haha
- heat up the butter, about over medium heat then add the onions. stir and cook over medium heat until they are caramelized, which happens in about 6-7 minutes. make sure not to get them too dark otherwise your soup will taste like burned paper.
- add the flour and stir until the onions are covered. then add the broth, or potato water in this case, and bring to boil. lower the heat and allow the soup to simmer and reduce, seasoning with salt and pepper as you would like it. you can also mix and top it with cheese, toast some bread up, cut them into cubes and drop it in the soup.
- congratulations, you just made a decent meal for yourself. now go and enjoy your hard work! :)
