Shakshuka.
Shakshuka is an Israeli dish of eggs cooked over in a sauce of tomatoes, peppers, and onions, often spiced with cumin and paprika. I came across this recipe online when I was craving for falafel, and seeing that it only has a few ingredients, I decided to try it for breakfast. we ate this baby with dinner rolls and it was really good, the aroma is pretty appetizing too, although i made it a bit too spicy by putting too much paprika. haha would definitely try this recipe again.
Shakshuka recipe
Ingredients:
- oil, preferably olive oil
- 3 or more eggs
- tomato paste
- 2-3 medium tomatoes, diced
- 2 cloves garlic, minced
- 1 big white onion, diced
- 1 big green and red bell pepper, diced
- sugar, salt and pepper
- cumin and paprika
- parsley, optional for garnish
Procedure:
- heat a deep, large pan on medium. Slowly warm olive oil in the pan. Add onion, sauté until it begins to soften then add garlic and continue to sauté till mixture smells yummy.
- add bell peppers and sauté until softened.
- add the tomatoes and about 2 tablespoons of tomato paste and stir until blended, adding some water if you think the sauce is too thick. add a teaspoon of cumin and paprika (these are SPICY so better put them gradually depending on your preference.) and salt, sugar and pepper to taste. allow the mix to simmer for about 5-7 minutes. you can taste it and add some more spices if you want. here's a tip: if the mix is too spicy, add some sugar to balance it out. :)
- next comes the messy but quite fun part: cracking the eggs one at a time over the mixture. make sure you have enough space between the eggs over the sauce. check out this picture for a visual of it. you could try to dig up a space in the mix so that the egg cooks faster, or you could just let it be. this method will cook the eggs "over-easy".
- slightly turn down the fire, cover the pan and allow the shakshuka to cook for 10-15 minutes or until the eggs are cooked and the sauce has slightly reduced, but make sure to keep an eye on it so it doesn't burn. you wouldn't want that, would you?
- garnish with chopped parsley because it looks pretty or leave it as it is.
- this is best served with bread, we ate this for breakfast and it was scrumptious!
