Pag-ibig.
You might be wondering why I named this one like that. well it kind of resembles pag-ibig: sweet, sour, and bitter, or so my office batch mates told me. hahaha they came up with that name, honestly, since they would always ask what I cooked for lunch. I told them its sweet and sour fish but with ampalaya's bitterness. thus, the name came to be. :)
Pag-ibig recipe
Ingredients:
- a medium-sized carrot, 1/2 inch cubed
- a medium-sized ampalaya (bitter gourd), sliced 1/4 inch thick
- a medium-sized onion, 1/2 inch cubed
- 1 red bell pepper, 1/2 inch cubed
- 3 tbsp tomato ketchup
- 1 tbsp sugar
- 1/2 cup water
- whole cream dory fillet, cut into chunks
- salt and pepper
for the fish batter
- 1 egg, beaten
- 1/2 cup flour
- salt and pepper
Procedure:
- heat a frying pan with oil in medium heat. starting with the fish, add salt and pepper to the egg and put it in a container or bowl. in a separate bowl, put the flour and a pinch of salt and pepper as well. dip the fish in the egg and cover it, then roll it in the flour. when the oil is hot enough, drop the fish and fry it until golden in color. drain excess oil using a paper towel.
- for the sauce and vegetables, i sauteed the carrots, bell pepper and onion in a skillet. check if the carrot is softer, then add the tomato ketchup (I used Heinz, just so you guys know), a bit of water and sugar. mix it so the sauce covers the vegetables. check if the taste is okay for you. you can add more ketchup or sugar, depending on what your taste buds are telling you. :)
- lastly, put the ampalaya in the skillet and cook for about 2-3 minutes. check the taste, since it may become bitter now that you added the ampalaya. fix it up with ketchup and/or sugar again, or you can opt to let it be.
- this step can be skipped, if you want to have the fish crunchy, but you can mix the fish in with the vegetables and toss together so the sauce coats the fish too.
- congratulations, you just made a decent meal for yourself. now go and enjoy your hard work! :)
