Carrot-Cucumber Pancakes.
I usually buy vegetables every time I go to the grocery so thought of trying something new for lunch. I research recipes online then do my take on them. :) paired it up with pesto garlic rice since I had leftover pesto powder.
Carrot-Cucumber Pancakes recipe
Ingredients:
- cucumber, grated
- carrots, grated
- garlic, chopped
- egg
- salt and pepper
- 1/2 cup of flour
- 1 teaspoon of baking soda
Procedure:
- in a bowl, mix the carrots and cucumber together. drain any excess water then add salt and pepper to taste.
- in a separate bowl, beat the egg until bubbles appear. transfer the egg to the cucumber-carrot mix then combine well.
- add flour gradually to the mix, check if the consistency is just right; if the mix is not lumpy nor watery and it kindov coats the spoon, that's perfect. :) add the baking soda as well.
- just like cooking pancakes, spoon the mixture in a heated skillet and cook one side until the surface bubbles, then flip it over and cook the other side.
- congratulations, you just made a decent meal for yourself. now go and enjoy your hard work! :)
**Variety: tried it without the cucumber and it came out well too. yeah!
